The task of keeping two kids under the age of 2 alive for the past 5 months has significantly slowed down my fermentation output, but when I came across some organic napa cabbages at Abundance Co-op last week I couldn't resist buying them.
So, that afternoon while the kids napped and my wife did some sort of value added chore to keep up with our lives, I hunkered down in the kitchen and made kimchi! 6 lbs of kimchi to be exact!

I followed the same recipe as I did for the first Kimchi with only two changes:
- I fermented it in a crock instead of jars. This was because the volume I was making was a bit larger, and I own crocks for fermenting, so why not use them.
- I renamed it after the 1974 disaster film "The Towering Inferno", staring Steve McQueen, Paul Newman, and O.J. Simpson. This was because that movie was awesome, and The Towering Kimferno sounded better than just kimchi.
It can be used to spice up cabbage or blind your enemies. |

Either way, the result is that deliciously spicy fermented flavor you would expect from a kimchi that will only get better as it continues to ferment in the jar.
